I have always used a flue brush to clean the flues on my drop flue evaporator but I have never used a brush to clean the syrup pans. Do you use a brush on the syrup pan and is a a stiff plastic bristle brush or a steel or copper bristle??

I use a plastic bristle brush. If I have a dark spot to clean I use SS steel wool, coarse type. Seem to work good. I clean them while on the arch and fire them to have it hot but not hot enough to burn me.

Sorry, I meant the underside of the pan.

Kevin,
Sounds like a plan! I brush the flues every boil and if I boil for more than 10 hours, I can see the evaporation rate start to drop from buildup.
I have never brushed the syrup pan, so will be anxious to see if that helps any! :D
