Although this research is tentatively quite interesting, it isn't at all surprising. Maple syrup has a number of phenolic compounds in it that haven't yet been identified. Also, please keep in mind that the beneficial aspects are very preliminary. These compounds are active "in vivo" (in glass), however it is not known how (or if) they function within the human gut. Many times these things get broken down and inactivated when ingested. So overall, interesting...but there is a long way to go and much research to be done before declaring these compounds to be beneficial to human health.

It would be cool if the corn syrup folks spend a fortune trying to disprove it and fail, and we hear about it :D
