am i wasting my time skimming this stuff off or am i throwing away sugar?

Taste it and you'll probably want to toss it. All the less muck to filter or let settle out later. There's not much sugar in it anyway, especially when it's barely past the raw sap stage.

most of the scum is made up of impuritys. (so i have been told) will it have some sugar in it? probably but I do not know for sure. but i sure do not want it floating on top of the syrup i bottle, so out it goes!

happy is probably 100 percent right that it would be caught in the filters later. i never left it long enough to find out.

I skim it off and toss it on the ground. My dog is so happy to lick it up (specially when it's close to syrup) that I tried some! Don't do that. Pretty bad stuff.

i always remove scum asap., no sugar in that, it is something that float, so less density. it is easy to remove to prevent bad taste of syrup, why clog filters whit that? its only impurties.

If you use defoamer you will not get it to begin with or atleast such a little amount you wont have to waste your time.

I skim it off, and let my strainer linger over the pan, so clear drops of sap drop back in the pan. Then I bang the sive strainer on the side of the barrel stove, where it sticks or falls on the ground. The dogs don't even like after a few days.

if you filter your sap.. and dont allow it to get warm enough to ferment ...you wont have any scum floating. 100 micron filter is all it takes
