Maple Sea Foam

Ingredients:
1 cup Maple Syrup
1/2 tblespoon Baking Soda

Directions:
Cook Syrup to 302 Degrees
Stir in sifted Baking Soda quickly
Pour into a pan and let it cool

there was one already, but Ill repost mine.

2lb ground pork
1 tsp salt
1 tsp black peper
1 tsp ground sage
1 cup maple syrup.

Mix well. Stuff into casings.

I saved the last deer leg for this. It was brined in 20 gal of sap cooked down to 4 gal for a week. I also injected it with the brine. The leg was smoked in a smoker that attaches to the evaporator. It smoked for 24 hours at 130 degree.

1 whole bone in deer leg
4 gallon reduced sap
3 cups Morton Quick Tender
1/2 cup whole black peppercorns

bring 1/2 gal of sap to boil and add Quick Tender and peppercorns. When the Quick Tender disolves add the brine to rest of the cold sap. When it's 40 degree inject the leg along the bones and through rest of the muscle. Store the leg between 40 and 42 degree's for a week in the 4 gal of brine. Smoke with favorite wood at 130 degree for 24 hours.
