Was wondering what the general consenus was on Copper made evaporators. I have seen a few for sale and they look real nice, but will they make "non-metallic" tasting syrup? Thanks.

They make great syrup. Years ago all the best evaporators were copper because they transfer heat much more efficiently. The industry moved away from them due to the cost of copper and the transition to welded pans.

I appreciate the reply, I want to get rid of my halfpint and I am considering all options. I was worried about metallic taste and corrosion with a copper evaporator. I saw there is a guy that makes them in vermont. Thay can't be much more expensive (hopefully less) than stainless steele at this point. Thanks again for the info.

have a 4x14 leader and love it.....can get 220 an hr with an air tight front.....
