This is my second year for making maple syrup, yet I still come across words and phrases I don't really understand, such as "sweetening the pans". What are some good books for learning the maple lingo, and explaining the reasoning/science behind making maple syrup?

The North American Maple Syrup Producers Manual will have everything you'll ever need all in one book. It covers from the basics of hydrometer use to how a flow through pan works to advanced wood lot management and tubing installations. Your local supplier should have it in stock or you can order online.
