I drained my front pan (2x3 divided soldered stainless) to clean it before the next boil and was surprised to see the bottom is rippled. Any thoughts on why it happened? I burn wood and use a blower off a Beckett burner for air over fire.

How much niter build up do you have on the pan?

I had only boiled 200 gallons of sap, but the nitre was heavy for the amount of sap. The nitre settling caused hot spots? Uneven cooling? It was my first go-around using the blower. : /
