Is a week to old? It's been kept at 40-50 degrees in my basement.

My opinion is its still good, is it still good and clear?

Middle 30's would have been better because sap needs to be treated like milk to keep it good, and of course freezing it would be better. So it may have spoiled, but if it is clear and also not slimy it should be OK. I would cook it up and not mix it with any new sap incase it doesn't turn out good.

Taste it. If it still tastes mostly like water it should be good. If it's getting cloudy, it's on its way to spoiling.

I always use the clear /taste test if it pass both then boil it if its not clear do not bother tasteing it

boil it and make b or commercial and sell it as bulk. Sugar is sugar.

i found oddly enough my neighbor had a barrel of sap on a tree he tapped and it has been filling for 4 weeks now, he said it was extra to him now as he boiled his small amount he makes, and i could have it, i said its surely spoiled but i will look, well odd enough it looked perfectly clear, and was 3 percent sugar, boiled it off tonight along with my other sap, have no idea how it stayed good so long, i had sap looking cloudy after 3 days last week!

Decided to dump it. I had lots of fresh sap to replace it :D
