is there any downfall to boiling all day not finishing it and starting back up the next day
sometimes i have to do this just to get going since my time gets cut short sometimes and cant devote a whole day to it

That is what I do, and I don't see anything wrong with it. What I do is filter what I have in the pan at the end of the day, clean the pan and restart the next day. I find by filtering it at the end of each day, it gives me a better product. In the past when I was using propane and pans, I would save each day's batch in a 5 gal bucket in a small refrigerator, (Fri, Sat) and finish it on Sunday.

The only downfall if you may end up with slightly darker syrup.

It would be safe to say that almost everyone boils till they quit and leaves what's left in the pans and then starts up the next day, or whenever they get a sap run.
