I'm currently specing out a second pan set up for a 2 x 4 evaporator so that I can switch over to production runs between people making their own syrup on 4 1x2 batch pans. Because I will have to switch every weekend I'm going with a flat bottom divided pan with pre heater and I'm thinking a sight tube near the thermometer port would be helpful at monitoring the depth from a distance, in low lighting, and during draw offs. I am also thinking that a float valve on the pre heater would also make sense (at least until it sticks one night). The question I have is that I don't recall much discussion about either of these options on smaller 2x3, 2x4, or 2x6 rigs and wondered if there was a reason for that? Is a sight tube on a small evap not helpful? Is it hard to source a float to fit the first channel of a 2x evap? If I'm willing to spend the money is either option worth it?
