Now what!?!?

2x4 evaporator, I've gone through all of my sap - about 60 gallons. Do I continue to boil, or do I let the fire die and pick up again when the sap flows again?

I boiled up my 50 gallons down to about 7 and let the fire die out on Saturday and plan to collect sap after work on monday and add it to this batch. When I get it down to about 4 gallons in the pan I will drawoff and finish it on a gas burner. Best of luck!!!!

I also use 2x4 I let fire die out if its going to be real cold I drain once everything is cool. When I am ready to boil again I filter the drained sap before adding back into evaporator. once it starts boiling again start adding fresh sap
