What guage stainless should i go with for a new home made evaporator. A skilled welder will be doing the work. Not myself. :lol:

I think that most of the big guys use 22 gauge.

Evaporator pans are 20 or 22 gauge from the manufactures. Leader builds theirs in 20 gauge and most others in 22 gauge or offer 20 gauge if customer prefers.

the thicker you go the less heat transfer you get. Most commercial pans are 18-20 gauge. So if your welder is comfortable with either size go for it.
