Do bucket taps dry out quicker than those on tubing?

Most likely due to greater exposure to bacteria.

If you've used both methods, what is your experience?

If you have vacuum on the tubing and run it constantly the tap holes will stay open longer, if you just have gravity tubing, no vacuum I'd say they would be the same.
