I used to go from weekend to weekend storing sap in barrels buried in the snow. I would check it with a thermometer from time to time and I usually got something close to 35 deg. depending on how hard the freezes in the night were. That said, sometimes by the end of the week, the sap was a little cloudy - not yellow, closer to white or grey. The syrup was fine.

Later in the season, there was less and less snow to keep the sap buried and it was more affected by daytime highs hitting the 50s and up. It was definitely cloudier, but in the end, the syrup was fine. It's the sap in the buckets that yellowed first and I dumped those.

I would think if you have a constant 34 degrees, you should easily be able to go a week between boils. Be sure to share what happened when it's all said and done. This is a very popular topic.

If it's in the 40's, and doesn't freeze at night, what is the time span to get the sap boiled? There is still snow on the ground at this point, and there is some shading as well. Sap's in buckets on the ground. I'll be boiling outdoors, and the forecast is for rain through the weekend, and no temp shelter built (to boil under) as of yet.
