I calibrated the Thermoter last weekend. When I picked it up today I noticed it read around 25 degrees and I thought it odd. So I put it in boiling water again and when I did I saw the thermoter sping all the way around and eventualy end on zero were it was calibrated to be. so I am assuming the temp I saw when I picked it up was room temp?

Yes, it was reading the room temp because when you make syrup, the thermometers have to make a full revolution to get back up to zero. They will read differently from day to day in the sugarhouse depending on the temperature of the sap in the evaporator when you are not boiling.
