View Full Version : Where to keep my sap?

This year I am better prepared , after all I found this place after year 1 lOL

I had about 10-15 taps last year but I am going to 50 this year
Built a shack
built an arch

I picked up 3 55 gallon food grade plastic barrels
My question is this, I now have them placed inside the sugar shack but I am thinking that they are probably better outside to stay cool

I can only boil on the weekends as we don't live where we do this
I was thinking it would be bad for the sap warming up in the shack & cooling down,
Is it better to just leave them outside?

I would say to keep them outside in the shade and pack snow around them. Make sure to check your sap for quality before you pour it in with other known good sap or into your evaporator. One bad bucket can spoil a batch.

The old saying is to treat sap like milk, so keep it cool, in the shade and packed with snow, as was stated previously.

Well, from what I have learned, what you keep it in is just as important as how you keep it. I went from thinking I could use a Galvanized 200 gallon stock tank that I could afford to possibly a 125 gallon HDPE tank that is almost 2x the money as the much larger galvanized tank! Unbelieveable.

In addition to keeping them outside in the shade and packing snow around the barrels, if you've got the room in your chest freezer you can take a 3 or 5 gallon bucket, fill it with sap, and freeze it into a giant "sap-sickle" and put one in each 55 gal drum. I find this to work well. As long as the daytime temps don't get above 40-45, a 5 gallon ice cube will easily last several days.
