protective gas over sap

I did an extensive search both search words "protective gas" along with reading all the threads in the sap forum.
I didn't find anything about protective gas above sap.
From my experience in my industrial business along with making wine and beer, I know how protective gas can minimize bacteria.
So, what is the current knowledge about protective gas over sap?

You would need a fully enclosed vessel, but food grade nitrogen would work. On the other end, it will cost too much to be cost effective I would think. Beside the necessary fittings and gauges the gas is over $20/10 cf tank.
