Tried making maple candy today, didnt go so well... looking for some opinions! =]

I first brought about 2 cups of syrup to 235 degrees the first time then 252 the second time.

Then cooled it down to 175 without stirring.

Stirred until thick and creamy ( about 10+ mins)

Poured into rubber molds.

Both times my mix ended up like soft taffy, never quite getting hard enough. Wondering if i should go hotter or change something?

bring syrup to 236-238...mix your syrup until it gets syrup until it gets creamy and you can see it leaving tracks on the pan bottom...if you stir to long it will start to set up in the pan or as you start to pour, but have no fear because if it sets up take your mix back to the stove and reheat it stirring often until it is remelted, then pour mix into molds. gauranteed to set up in you molds for sugar cakes.....a plastic paint stirrer for your drill purchased at your local walmart takes alot of the hand work out of the process.
