Considering sap was running slow, plus I was busy doing other things. I had sap sitting in some buckets for 3 days. It was 60 on Friday, so it was my fault for not getting to them. Get up this morning and the bucket behind the house looked like 1% milk. Worse than that I had 50 gallon in shed and was dumb enough to build a fire in there yesterday. It was cloudy as well.
Wondering if others leave their buckets hang when it's slow like that?
When I was done boiling, the wife said it was the best I've ever made. Go figure.

really, well I guess that is good. Tisk on your faor letting it spoil though! Kidding.

the best syrup made for eating comes at the end of the season in most cases, and that's when the sap comes in cloudy. We call that the private stash.

If it stinks really bad then dump it but if it is just cloudy and doesn't smell really bad, it would probably still make good dark syrup. Might be a grade "B" but still would be good syrup.

In the past I have gotten away with that in the beginning of the season. Like was mentioned, if it has a bad smell get rid of it for sure. My first year, I made syrup till the sap stopped running. The last batch I made smelt funny throughout the entire process. I was hoping after more boiling it would somehow make it all better. Long story short, 10hrs later it found its way down the gurgler, along with a few tears.

remember, storing sap means you have to have it in a dark, cool place. It's just like milk and will spoil in heat, and also will spoil in sunlight. Then the sap is no good

Guy with a sheepish grin pouring away spoiled sap that he couldn't get boiled in time.
