Hey Guys, first year syruping, my dad and I have a 2x3 pan with a little preheater on top and an arch made up from 1/8" sheet metal firebricked and ready to go. We have a 12x16 lean-to made up in the woods out of old garage doors. How big of a steam hood would I need to get the steam out of this shack, If it is like 3'x4', 6" thimble, a couple ft above the pan, would that be good enough to get the majority of the steam out. I know most of these hoods are tight to the pan. Also, would galvanized be ok?
