Does my new flue pan need baffles to work to its potential or is it OK to leave them out? Kind of thinking it is there to get the bulk of the water out and the flat pan takes over from there.

It's good to have one to prevent incoming sap from flowing straight out to the syrup pan

One or more are best, it makes the fresh incomming sap follow a longer path so you get better density, and more uniform density into the syrup pan.
Try to make it so sap can't sneak under and mix.

Thank you as always. I can see that the walls would keep the stuff in the pan from "channeling" sap that is not as refined as the rest.

Paperman, you really only need one divider down the middle of the flue pan. Also when you switch draw off sides on the front pan you will want to plumb your incoming sap lines so you can switch your cold sap opposite of your entrance to the front pan.
