I should be getting a new pan soon. what do I use to clean it after it has been at the fab shop? I picked up some leader pan cleaner the other day, shoul I use that or is there another mixture I should use?

What I did for a new pan was simply a good hot wash with dish soap (flat pan), multiple rinses. I always have boiled water (test boil) in my evaporator pans before each season. Sanitize, rinse, check for leaks, etc.

What is your pan like? Flat bottomed, flued?

I have always used white vinegar for years to clean pans. Just fill it with water and add a gallon or so of it and let it boil for a little bit and rinse rinse rinse.

Good scrubbing with some Dawn detergent and a good rinse would be fine. Will likely have oily film on it and the detergent will cut the oil good and clean it nice nice. No reason for pan cleaner or vinegar until you get buildup on it from boiling.

I washed my new evap up pretty good but have a few questions on this topic. I boiled water then let it cool a little and washed it with the dawn dish soap, then drained and rinsed it then filled with water and boiled again and then one final rise. My question is, these are brand new pans that are soldered, is the dish soap enough to get all the flux off and out of it or do I need to do something more?

In the instructions with my new Leader pans, It said to boil a mixture of baking soda and water for an hour. Then drain and boil again with plain water to rinse. It said the mixture should be 1lb baking soda to 200 gal water. I certainly won't need 200 gal to clean me 2 x 6 so I'll reduce the volume to 1/4 lb and 50 gal water or less. Also, I recall my uncle using this same sollution the clean newly soldered copper pipe jobs. It removed the flux and made the copper bright and shiny.
