I'm putting pan dividers in a new flat pan 24 wide should I use 2 dividers for 3 compartments or will it be any better with 4 dividers and 5 compartments,Thanks for the help

most 2' wide pans that I have seen have 2 dividers for 3 compartments. How long is your Pan?

The pan is 36 long

It also also depends on the sap in side and your draw off side. Now if you want more control over your draw offs meaning you draw off smaller amounts but for longer periods I would go with more channels. Your still boiling the same amount of sap into syrup you just have less mixing and better control near the draw off.

Like Haynes said, you should probably base it on where you want sap to come in and where you want to draw off. You are going to get good syrup either way you put the dividers.

I put three dividers into my 2x3 front pan so that the in/out are at the same end of the pan. I didn't want to mess around with flipping the pan if I wanted to reverse the flow. It also gave me 4 6-inch channels that are small enough to get a gradient, but big enough to get a scoop down into.
