2'X3' vs. 18"X48" pan

Even though equivilant in size, is it safe to assume the 18"X48" pan would (should) have a faster evap. rate than the 2X3 because of the flame staying under the pan for a longer distance? Thanks.

I wouldn't say that one pan would evaporate faster than the other, but you might use less firewood per equal amount of sap with the longer pan due to more efficient heat transfer. I think the difference is going to be minimal either way though.
